1) Get rid of the old dusty fax machine and sign up to a fax to email service online, this way you will be able to receive and send all of your faxes digitally and eliminate the use of paper.
2) Get rid of that filing cabinet and keep all of your important into a computer database that can be remotely accessed, remember to always take backups.
3) Make the office use all of the latest technology implementations, there is no need to use any paper in this day and age so scrap it all and jump into the technological realm.
